Run out of Baking Powder?

This is just the type of thing that happens to me all the time! You see we live on a yacht and shops are sometimes not all that easy to get to...and do I love to bake!

This one is easy:

2tsp Cream of Tartar
1 tsp Bicarbonate of Soda

Makes 3 tsp of baking powder.

If you don't have cream of tartar, sorry but you can't make baking powder.

If you have had a the cream of tartar and bicarb for a while add half a tsp of mixed product to 125ml of water and see if it fizzes. If it fizzes your baking powder is active.

This little trick has saved me on more than one occasion and I always have cream of tartar in stock just in case.

Waffles

One of my favourite treats is a waffle so when I spotted a waffle iron that I can use over a fire...none electrical I was sold!

Here's how I make them at home on a gas stove...light, fluffy and delicious!

Ingredients:
1 3/4 Cups flour
2 tsp baking powder
1/2 tsp salt
1 Tbsp Sugar
3 Eggs
1 3/4 Cups Milk
1/2 Cup oil
1/2 tsp Vanilla essence

Method:
Sift dry ingredients together. Add all the other ingredients and mix until you get a smooth batter.
Spray the waffle iron with non stick cooking spray and laddle the mixture on. Close and cook over the gas fire. Open to check after a few minutes and turn occassionally. Remove once golden brown on both sides.

Serve with syrup and icecream or whipped cream.




Yorkshire Pudding

These savoury pudding cups are amazing, I use them as a bread replacement. I make them for a traditional roast, I place viennas cut in half into the batter before baking for an awesome light supper. Try these, the trick is the temperature of the pan and dough...follow my advice and you will have no fuss yarkshire pudding in no time!

Ingredients:

2 Large Eggs
pinch of salt
2 Heaped Tbsp Flour
25ml Milk
25ml Water

Method:
Mix all the ingredients together in a small bowl. Place the bowl in the fridge for 1 hour.
Heat your oven to 240 degrees Celsius. Lightly grease a muffin pan [or a cup cake pan]. Add a drop of oil into each cup and place the empty tray in the oven for 5 minutes until hot.
Add just enough cold dough to the bottom of each muffin cup to cover it.
Cook for 15 minutes.
